This lemon cake is easy and delicious. I am delighted to share this recipe with everyone. A big thank you goes out to Kathy at Kathy's Cottage, for a terrific idea we can all enjoy.
The best part of this cake is the lasting power of staying fresh. I
can keep this for a week and it is still moist and luscious. Here is a
piece cut just for you.
This recipe below is so easy. You have to try this today. Smile!
1 c. butter, softened - or margarine
2 c. sugar
3 lg. eggs
1 tsp. vanilla
2 tsp. grated lemon rind
3 1/2 c. cake flour or plain flour
2 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
2 c. sour cream
*Please see note on the size of pan used.

Grease
bottom of 3 (9 inch) round cake pans and line with parchment paper and
grease again. Cream butter and sugar together. Add eggs one at a time,
beating after adding each one. Add vanilla and lemon peel. Sift dry
ingredients together and add to creamed mixture alternately with sour
cream. Divide batter among three pans. Bake at 350 degrees for 30-35
minutes or until tests done. Cool.
(Please note) I made this recipe in a tube pan instead of layer pans. It baked approx. one hour. Please keep checking with a baking stick because of the different style of pan used. The icing is one cup sifted powdered sugar, three to four teaspoons lemon juice, mixed together to a drizzling consistency. Pour over lemon creme cake.

Oh, I love lemon cake. I don't think one would ever last a week to see if it was still fresh. I'm adding this to my list of "want to make" recipes.

Welcome back! I checked on and off and now suddenly you are back and I have missed lots of post. Boy, does this look yummy. I wish I had some sour cream as I would run right downstairs and make it. I even have lemons to try some cookies from another blog this week.

OH! Thank you Jeanne! I was hoping someone had a recipe that called for sour cream as I have a container that is expiring soon and I wanted to use it up. This looks delicious! I love lemon so I know this will taste so good.

I love lemon and I need a recipe for my neighbor who fell and broke his hip and was searching for a lemon one earlier this AM. Since I like to bake from scratch and I like to try new recipes and yours is tried and true I am going to make this for him. I may use cake flour to get a lighter texture since you said you can use both and I think I will make it in a fancy cake pan and use powder sugar to sprinkle on top instead of a glaze. I will make it later today so I am off to print your recipe and will let you know how it turns out in a different pan. I would love to make one for us but we are on diets this week. Next week is always a different diet story:) Thanks for sharing.
