Crock Pot Wednesday is a type of cooking I have loved since I worked and had to have a meal ready for dinner for seven people every weekday evening. I decided it would be fun to join in this event. Be sure and visit Debbie at,Dining with Debbie to share your crock pot recipes. My first recipe is roasting a chicken in a crock pot.
Ingredients
- 4 teaspoons salt
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon onion powder
- 1 teaspoon thyme
- 1 teaspoon white pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 large roasting chicken (with pop-up timer if possible)
- 1 cup onion, chopped (optional) I added green beans and red skinned potatoes
- Directions
In a small bowl, combine the spices.
Remove any giblets from chicken and clean chicken.
Rub spice mixture onto the chicken.
Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I'm always in a hurry).
When ready to cook, put chopped onion in bottom of crock pot.
Add chicken. No liquid is needed, the chicken will make it's own juices.
Cook on low 4-8 hours.
Note: I highly recommend a pop-up timer in the chicken because some crock pots cook faster/slower than others (my crock pot cooks this recipe in 4-5 hours).

Today i found some photos from our vacation this summer.
I was going to share some wild flowers. Then...I found a place we visited in Colorado while we were on the way to Pikes Peak. This was such an amazing place. A wolf preserve. Unexpected and very heart rending.

These wolves are in the preserve to live and sometimes they are sent back to the wild. The biggest reason the wolves are in the preserve is to save their lives and educate the public. The Foxes are there for the same reason. There is so much more to this story... It is too diverse to explain. One fact is certain. These animals could be put down if the preserve didn't take them in. They were unwanted animals. Some are wolf/dogs as well.
These white wolves are from Mexico.
They were beautiful.
We had to take photos through the wire fences.
You can tell this guy is getting pretty old. These wolves will for the most part live a loved and happy life until their natural death. The only reason they would be put down would be to stop suffering.
These eyes just grabbed me.
This fox is one of a pair.
These two foxes are so cute. They were waiting for food.
This fox was looking pretty happy with his own house.
The preserve is funded by donations and fees from visitors.

I never thought of roasting a whole chicken in the crock pot. You are always teaching me tricks. I'll give it a try.
I think wolves are such beautiful animals. This preserve is a good thing. Man has had an overwhelming impact on the balance of nature.

Love the wild animals. In Tucson Arizona...if you ever get a chance to visit there, there is an Outdoor Museum that has a huge area of wild animals fenced in...but the human cannot see the fence...it's a patented concept and it looks so awesome not to see the wires!!!! [Unless you squint your eyes]

I love to make crockpot chicken. It tastes just like the rotisserie chickens found at the grocery story and oh so easy. I think I'll pick up a chicken tomorrow while we're out and cook it in the crockpot. I love using my crockpot. It's great getting the evening meal ready early in the day.

I'm glad you shared the wolves with us. The white ones are so pretty. I know that wolves have become scarce in this area. I think they are protected. It is always good to see someone trying to keep a species alive and vital.
I like the idea of the crockpot theme. I copied your recipe and I'll visit others. This style of cooking appeals to me very much. I am always looking for recipes I can adapt to the one pot method.

Oh, Jean, I love these poor animals. Just before I read what you said about the eyes on the one wolf I was thinking how amazing they were. So intelligent.
The white wolf looks like our former husky, Sally. She reminded everyone of a wolf.
Your crockpot recipe looks great.

Roast chicken is such a comfort food...and I love your idea to fix it in the crock pot. Ina Garten (Food Network) always seems to fix roast chicken in such great ways...I think she would like your version as well. The eyes was gorgeous....Thanks for stopping by...My test(cat scan) was okay....the diverculoasia is not inflamed...and that not causes my pain....My lab work was all normal except blook in my specimen...So I go to a specialist about my Kidney...on Sept 24th...My family doctor did lab work today to see how my kidney is functioning...So keep me in your prayers...Thanks so much for your prayers. The crock pot recipe looks great. This time of year is great for a nice slow simmered meal. Just being at home smelling it cook all day (and knowing I don't have to watch it!!) is a treat itself!! Thanks!
The sanctuary touched my heart. I have such a love for all animals. I am grateful there is a place that takes these creatures in. The foxes made me smile~they don't look like foxes at all to me! Guess I haven't been out in the wild enough!! lol!!
