My cousin Bob is visiting from MI and he cooked dinner for us tonight. It is a delicious meal in one pot called 'Sausage and Apples.' This may not sound good but my hubs and I will attest to the goodness of it all. It is easy and economical.
First some photos to share.
A simple dinner but the taste is rich and a little bit spicy. I like a bit of red wine with this meal.
Trust me...this is delicious.
Corn muffins are the perfect compliment to this meal.

Recipe for 'Sausage and Apples' one dish dinner.
2 pounds ground sausage. ( mild or spicy optional )
6 apples (cored and cut into wedges)
4 regular cans of diced tomatoes
! or 2 cans kidney beans (rinsed and drained)
I large onion (cut up but not copped fine)
1 Tbl chili powder
1/2 tsp salt
1/4 pepper
Directions (easy peasy)
In a LARGE pan brown the sausage then drain off the fat.
Put the sausage mixture back in the pan and add all of the above ingredients.
Cook (simmer on top of the stove for 45 mnutes)
Then enjoy.

Now THAT'S interesting!! I was sorta expecting Mrs. Wilder's Apples 'n' Onions, but then the tomatoes and kidney beans carried it to a whole 'nother level. Sounds hearty and SO good for a night like this one promises to be.
Hope all is well and warm where you are---we're 15 and RAW cold today, so a staying-in afternoon with something good simmering on the stove sounds JUST RIGHT.

This sounds very delicious. I like the idea of sausage and apples though I've never had the 2 together. A good Bob Evans sausage would probably be really good. I will add this to my great meals to try out. Thank you for sharing Jeanne. I love your little crock too. Your table setting looks great and just so perfect for what you are serving....and gotta love those corn muffins. Wish it would have 4 servings.... ;o)
